Understanding Peanut Kernel Sizes: 25/29, 29/33, 35/39, 41/51 Explained

The Count-per-Ounce System Explained

If you have ever sourced peanuts internationally, you have likely encountered size designations like “25/29,” “29/33,” or “35/39.” These numbers represent the standard international grading system for peanut kernels, and understanding them is essential for selecting the right product for your application.

The count-per-ounce system measures how many peanut kernels fit into one ounce (28.35 grams). A 25/29 grade means there are between 25 and 29 kernels per ounce — fewer kernels per ounce equals larger individual kernels. This system is used globally by peanut exporters, importers, and food manufacturers to ensure consistent sizing.

Red Skin vs Blanched: Does Size Grading Differ?

Both red skin peanut kernels and blanched peanut kernels use the same count-per-ounce grading system. However, there is an important distinction:

  • Red skin peanuts retain their natural testa (red skin), which adds approximately 3-5% to the kernel weight. This means a 29/33 red skin peanut is slightly larger in actual kernel size than a 29/33 blanched peanut.
  • Blanched peanuts have the skin removed, resulting in a lighter, cleaner kernel. The size grade is measured after blanching.

For most food manufacturing applications, blanched peanuts in the 35/39 to 51/61 range offer the best balance of size, yield, and cost-effectiveness.

Choosing the Right Size for Your Application

Premium Snacks & Gift Packs (24/28 to 29/33)

Large, uniform whole kernels create visual appeal in premium snack products. The 25/29 grade is the most popular for airline nuts, luxury snack mixes, and gift packaging. These larger kernels roast evenly and present beautifully in retail packaging.

Peanut Butter Production (35/39 to 51/61)

Medium-sized kernels (35/39 to 41/51) are ideal for peanut butter. They offer a good balance of oil content and protein, producing a smooth, creamy texture. Smaller kernels (51/61) are more economical and work well for industrial peanut paste and food ingredient applications. Learn more about peanut butter specifications →

Confectionery & Chocolate (29/33 to 41/51)

Chopped and whole peanuts used in chocolate bars and confectionery typically fall in the 29/33 to 41/51 range. The medium size provides good texture without overwhelming the chocolate matrix. Blanched kernels are preferred for their clean, uniform appearance.

Bakery & Cereal (35/39 to 61/71)

Bakery applications often use chopped or diced peanuts rather than whole kernels. The base kernel size for chopping is typically 35/39 to 51/61, which produces uniform 1-5mm dice ideal for cookies, granola bars, and pastry toppings.

Roasted In-Shell Peanuts (Separate Grading)

In-shell peanuts use a different grading system based on count per pound rather than per ounce. Common grades include 38/42, 40/50, and 50/60 count per pound. View our in-shell peanut options →

How Size Affects Pricing

Peanut kernel pricing generally follows an inverse relationship with size — larger kernels command higher prices due to:

  • Lower yield — Larger kernels mean fewer units per kilogram, increasing per-unit cost.
  • Higher sorting cost — Achieving uniform large-kernel grading requires more precise sorting and higher rejection rates.
  • Premium positioning — Large whole kernels are associated with premium snack products.
  • Seasonal availability — Larger grades may be less abundant in certain harvest years.

As a general rule, expect a 10-20% price premium when moving up one size grade (e.g., from 35/39 to 29/33). However, market conditions, harvest quality, and demand can cause significant price fluctuations throughout the year.

Quality Factors Beyond Size

While size grading is important, it is only one factor in peanut quality. When evaluating suppliers, also consider:

  • Moisture content — ≤5% for blanched, ≤8% for red skin (prevents mold and ensures crispness).
  • Aflatoxin levels — ≤5 ppb for EU markets, tested batch by batch. Read our aflatoxin control guide →
  • Admixture/defect rate — ≤0.5% foreign matter and defective kernels.
  • Color uniformity — Consistent creamy white for blanched, uniform red for skin-on.
  • Free fatty acids — Indicates freshness and prevents rancidity.
  • Certifications — BRCGS, HACCP, ISO 22000, HALAL for market access.

Custom Sizing & Blending

At Jinkai Foods, we understand that some applications require non-standard sizes or custom blends. We offer:

  • Custom size grading — If your application requires a specific count range not listed, we can adjust our sorting equipment.
  • Size blending — Mix two or more grades to achieve a target average size for cost optimization.
  • Splits & chopped — Half kernels and 1-5mm diced peanuts in multiple size ranges.
  • Private label packaging — Retail-ready packs with your brand and specifications.
