Peanut Butter Manufacturing: Creamy vs Crunchy, Ingredients & Quality Standards

The Global Peanut Butter Market

Peanut butter is one of the most popular and versatile food products in the world, consumed across North America, Europe, the Middle East, and Asia. As a food manufacturer, retailer, or distributor, sourcing high-quality peanut butter requires understanding the production process, ingredient differences, and quality standards. At Jinkai Foods, we produce both creamy and crunchy peanut butter in bulk and retail packaging for global markets.

Creamy Peanut Butter

Creamy peanut butter is produced by grinding roasted blanched peanuts to a smooth, uniform paste. The grinding process typically involves two stages: coarse grinding followed by fine grinding to achieve the desired smoothness. Creamy peanut butter is the most versatile form, used for spreading, baking, sauces, and as an ingredient in food manufacturing.

Crunchy (Crispy) Peanut Butter

Crunchy peanut butter is made by adding coarsely chopped or ground peanut pieces to creamy peanut butter. The added pieces (typically 1-3mm) create a textured, crunchy mouthfeel. The ratio of peanut pieces to creamy base can be adjusted to achieve different levels of crunchiness. Crunchy peanut butter is popular in retail markets, especially in North America and Europe.

Ingredients & Formulations

100% Peanut Butter (Single Ingredient)

The simplest and purest form of peanut butter contains only roasted peanuts. No added sugar, salt, oil, or stabilizers. This formulation is popular in health food markets and for food manufacturing use.

  • Ingredients: 100% roasted blanched peanuts
  • Advantages: Clean label, no additives, strong peanut flavor
  • Considerations: Natural oil separation (requires stirring), shorter shelf life

Standard Peanut Butter (With Additives)

Most commercial peanut butter includes small amounts of additives to improve texture, stability, and flavor:

  • Hydrogenated vegetable oil (1-3%) — stabilizer to prevent oil separation
  • Sugar (3-7%) — sweetness adjustment
  • Salt (0.5-1.5%) — flavor enhancement
  • Molasses (optional) — color and flavor

A typical commercial formulation might contain: roasted peanuts (90.2%), sugar (7%), hydrogenated vegetable oil (1.8%), salt (1%).

Organic & Natural Options

For organic and natural markets, peanut butter can be formulated without hydrogenated oils, using palm oil or other natural stabilizers instead. Organic peanut butter requires certified organic raw materials and processing.

Production Process

Step 1: Raw Material Selection

High-quality peanut butter starts with premium raw peanuts. We use blanched peanut kernels in the 35/39 to 51/61 size range, which offer the best balance of oil content, protein, and flavor. Raw materials are tested for aflatoxin (≤5 ppb for premium grade), moisture, and quality before entering production.

Step 2: Roasting

Roasting develops the characteristic peanut butter flavor and aroma. Peanuts are roasted at controlled temperatures (typically 160-180°C) for a specific duration to achieve the desired roast level. Roasting also reduces moisture and kills surface bacteria.

Step 3: Cooling & Blanching

After roasting, peanuts are cooled rapidly to stop the cooking process and prevent over-roasting. The red skin (testa) is removed through blanching, resulting in clean, uniform kernels.

Step 4: Grinding

Roasted blanched peanuts are ground in two stages: coarse grinding to break down the kernels, followed by fine grinding to achieve the desired smoothness. The grinding process generates heat, which is carefully controlled to prevent flavor degradation. For crunchy peanut butter, coarsely chopped peanut pieces are added after the fine grinding stage.

Step 5: Mixing & Formulation

Ground peanut paste is mixed with other ingredients (sugar, salt, stabilizers) according to the product formulation. The mixing process ensures uniform distribution of all ingredients.

Step 6: Packaging

Peanut butter is packaged while warm to ensure proper flow and consistency. Common packaging options include:

  • 200g glass jars — retail, premium presentation
  • 1kg plastic jars — retail and food service
  • 25kg food-grade pails — bulk for food manufacturing
  • Custom packaging — private label with your brand and design

Food Safety & Quality Control

Peanut butter production requires strict food safety controls due to the risk of aflatoxin contamination and the high-fat content (which can oxidize over time):

  • Raw material testing — Every batch of raw peanuts tested for aflatoxin before production
  • Metal detection — All finished product passes through metal detectors
  • Microbiological testing — Regular testing for Salmonella, E. coli, and total plate count
  • Oxidation monitoring — Peroxide value and acid value testing to ensure freshness
  • Clean production environment — Dust-free, temperature-controlled production area
  • Full traceability — Every batch traceable from raw material to finished product

Our production facilities hold BRCGS, HACCP, ISO 22000, and HALAL certifications. Learn more about our quality control →

Packaging & Private Label

We offer comprehensive private label services for peanut butter:

  • Custom label design compliant with your market regulations
  • Multiple jar sizes: 200g, 340g, 500g, 1kg
  • Bulk pails: 5kg, 10kg, 25kg for food manufacturing
  • Custom formulations (adjust sugar, salt, oil content to your specification)
  • Barcode and SKU labeling for retail distribution

How to Source Peanut Butter from China

When sourcing peanut butter from China, consider these key factors:

  • Raw material origin — Shandong province produces the highest quality peanuts with ideal flavor and oil content
  • Certifications — Verify BRCGS, HACCP, ISO 22000, and HALAL certifications
  • Aflatoxin control — Ask for batch-specific aflatoxin test reports (EU requires ≤5 ppb total)
  • Production capacity — Ensure the supplier can handle your volume consistently
  • Sample testing — Always request samples before placing bulk orders
  • Packaging options — Confirm the supplier can provide your required packaging and private label
